I was on the fat bomb bandwagon, but recently I’ve been wanting to add veggies in to as many as many of my meals as possible. Since it is currently late summer, zucchini is abundant and I wanted to use as many form my garden as possible. I love stuffed zucchini, but I always have the middle part that I shred left over. I decided to add this to my Keto muffin recipe. This left my muffins so, moist, and very filling!
I add the chocolate chips to the top right before baking. Top with a spoon full of no sugar added but butter if you’d like.
