My husband and I have been strictly Keto for 3 months now. Before that, I have eaten the Keto way on and off. Now that we have been consistent, I have seen amazing results. I will have an update on that coming soon!

I was on the fat bomb bandwagon, but recently I’ve been wanting to add veggies in to as many as many of my meals as possible. Since it is currently late summer, zucchini is abundant and I wanted to use as many form my garden as possible. I love stuffed zucchini, but I always have the middle part that I shred left over. I decided to add this to my Keto muffin recipe. This left my muffins so, moist, and very filling!

Keto Chocolate chip zucchini muffins

I add the chocolate chips to the top right before baking. Top with a spoon full of no sugar added but butter if you’d like.

Keto Chocolate Chip Zucchini Muffins

  1. Mix wet ingredients
  2. Mix dry ingredients then slowly add to wet ingredients until completely mixed.
  3. Divide mixture into 12 muffin tins.
  4. Sprinkle a few sugar free chocolate chips on top of mixture in muffin cups.
  5. Bake at 350 degrees for 15-20 minutes.
  6. Let cool. Eat plain or top with a spoon full of nut butter.
