Easy Week Night Dinner
I am constantly on the prowl for family friendly dinners that are Keto, fast, easy-to-make, and taste great! This can be a daunting task, but one pan dinners are the way to go! You can literally meet the dietary requirements of almost anyone. On one pan. Crazy, am I right?!
One pan dinners is actually a newer way of cooking that I don’t usually do. I always felt like my kids wouldn’t eat something all mixed together. One pan meals allows for the flexibility you need easily. I can add cheese or certain foods to only certain parts of the pan, add more variety of veggies I like and a little less on the “kids” side, or add some potatoes or beans for my non-Keto kids. It really gives you the opportunity to make everyone happy in a much more mom-friendly way!
This recipe was super simple! I cut up my veggies; onion, red and yellow peppers. The I seasoned them with some chili seasoning, cumin, garlic, salt, and pepper and added extra virgin olive oil. Then I spread it out on a pan covered with parchment paper.
Next, I cut up the chicken into strips and put the chicken in a bowl and seasoned it and added extra virgin olive oil. Mixed it up and put the chicken on top of the veggies. I cooked it at 425 for about 20-25 minutes.
I gave the kids whole wheat wraps and sides. I added a little bit of salsa and some sliced avocado. You could also add lime, cilantro, sour cream/Greek yogurt, and shredded cheeses. It was delicious, easy, and everyone was happy!
